Follow me on my personal journey to healthy and normal blood sugar levels. My name is Charlie and I am a type 1 diabetic, I control my diabetes with an insulin pump and a Libre. I was given the usual dietary advice upon diagnosis, which included alot of carbs and I don't need to say, my blood sugars spiked like crazy. That is when I found DR Bernstein and read his book, it made much more sense than the advice I had been given. I now follow the good Doctors advice to control my sugar levels. I then came across a Facebook group called Typeonegrit, where I also learnt the best way to control diabetes was through a LCHF diet, it was this group of people that really helped me on my way to normal levels, they gave me the advice and inspiration that I needed and they keep me working hard day in and day out.

Almond Thins

I must admit, I have missed that something crunchy to go with my cold platter. I saw this recipe for 'Almond Thins', similar to crackers and had to try them. They were lovely though you have to ensure you roll them out very thin before putting them in the oven so that they crunch. 3/4 cup of almond flour, 1 egg white, 1/8 tsp salt, 1tsp parmasan. Mix it all up and put the mixture between two parchment sheets and roll very thinly. Pop in oven for 10 or so minutes. Will be taking these to work with me.
