FATHEAD PIZZA

I love love love pizza, but as you probably know, pizza plays havoc with the blood sugar levels and is definitely not considered low carb. There are a few low carb pizza options out there, a lot of people like to make a pizza crust using cauliflower - but for a proper pizza you should really follow the recipe for the 'fat head pizza'.Ingredients:
- 1 1/2 cups shredded mozzarella
- 3/4 cup almond flour
- 2 tbs cream cheese
- 1 egg
- garlic herbs
- salt
- tomato puree
- toppings of your choice
Instructions:
- Using a microwavable bowl, put your shredded mozzarella and cream cheese into the microwave and heat until melted (I do about 1 minute).
- Stir in your egg and the almond flour.
- Place the mixture onto a piece of parchment paper and then put a piece of cling film over the top of the mixture and pat down flat - then use a rolling pin to roll out the pizza, the thinner the better.
- Gently peel off the cling film and sprinkle the mixture with garlic herbs and salt.
- Pop in the oven until it begins to get golden on top.
- Remove from oven and spread the tomato puree on top, followed by your toppings and cheese.
- Pop back into the oven until your toppings/cheese has melted.
Remember that if you want to put meat/veg on the pizza as a topping, it must be cooked before hand, as its only in the oven at that point until the cheese is melted.
