I was given the usual dietary advice upon diagnosis, which included alot of carbs and I don't need to say, my blood sugars spiked like crazy. That is when I found DR Bernstein and read his book, it made much more sense than the advice I had been given. I now follow the good Doctors advice to control my sugar levels. I then came across a Facebook group called Typeonegrit, where I also learnt the best way to control diabetes was through a LCHF diet, it was this group of people that really helped me on my way to normal levels, they gave me the advice and inspiration that I needed and they keep me working hard day in and day out.

Low Carb Pizza

The most amazing low carb pizza I have ever tried. You won't be able to tell the difference!

FATHEAD PIZZA

I love love love pizza, but as you probably know, pizza plays havoc with the blood sugar levels and is definitely not considered low carb. There are a few low carb pizza options out there, a lot of people like to make a pizza crust using cauliflower - but for a proper pizza you should really follow the recipe for the 'fat head pizza'.


Ingredients:



  • 1 1/2 cups shredded mozzarella
  • 3/4 cup almond flour
  • 2 tbs cream cheese
  • 1 egg
  • garlic herbs
  • salt
  • tomato puree
  • toppings of your choice


Instructions:

  1. Using a microwavable bowl, put your shredded mozzarella and cream cheese into the microwave and heat until melted (I do about 1 minute).
  2. Stir in your egg and the almond flour.
  3. Place the mixture onto a piece of parchment paper and then put a piece of cling film over the top of the mixture and pat down flat - then use a rolling pin to roll out the pizza, the thinner the better.
  4. Gently peel off the cling film and sprinkle the mixture with garlic herbs and salt.
  5. Pop in the oven until it begins to get golden on top.
  6. Remove from oven and spread the tomato puree on top, followed by your toppings and cheese.
  7. Pop back into the oven until your toppings/cheese has melted.
Remember that if you want to put meat/veg on the pizza as a topping, it must be cooked before hand, as its only in the oven at that point until the cheese is melted.
